Skinny Cinnamon Crumble Coffee Cake

Ingredients

  • Coffee Cake:
  • 2 tablespoons I Can't Believe It's Not Butter, Lite (80 calories)
  • 1/4 cup Joseph's Maltitol Sweetener (35 calories - or additional butter)
  • 2 tablespoons fat-free sour cream (20 calories)
  • 1/4 cup xylitol (120 calories)
  • 1/4 cup Truvia Baking Blend (95 calories)
  • 1 teaspoon vanilla extract (12 calories)
  • 3 tablespoons liquid egg-whites (25 calories)
  • 2 cups all-purpose flour (800 calories)
  • 1 tablespoon baking powder (6 calories)
  • Pinch salt
  • 1/2 cup unsweetened coconut milk (23 calories)
  • 1/4 cup hot water
  • Cinnamon Crumble Topping:
  • 1 tablespoon Joseph's maltitol (9 calories)
  • 2 tablespoons I Can't Believe It's Not Butter, "Lite" (80 calories)
  • 1 tablespoon ground cinnamon (18 calories)
  • 1/2 cup all-purpose flour (200 calories)
  • 1/4 cup Truvia Baking Blend (95 calories)
  • 1/2 teaspoon molasses (10 calories)
  • 1 tablespoon of fat-free half and half (10 calories, or additional milk)

Instructions

  1. Preheat oven to 350F.
  2. In a large mixing bowl, combine maltitol, butter, sour cream, xylitol, Trivia, vanilla and egg-whites. Stir using hand-mixer until combined.
  3. In a separate bowl, combine flour, baking powder, and salt. Sift until combined.
  4. Add dry mix to wet mix, little by little, until completely combined.
  5. Add coconut milk and water to batter. Mix until no chunks remain.
  6. Spray a bread pan with organic cooking spray and fill with batter. Set aside.
  7. In one of two bowls, combine all ingredients for the cinnamon crumble topping: maltitol, butter, cinnamon, flour, Truvia, molasses and cream/milk. It should form into a crumbly texture.
  8. Flake crumbles over coffee cake batter and place in the oven.
  9. Bake for 60 - 75 minutes, or until baked through.
  10. Allow to cool before serving (it's best at room temperature).
