I have a thing for Skinny Chocolate Coated Donuts, I just didn’t know it until I whipped them up this past week. As a kid, I hated sweets, but for some reason, those little Entenmann’s and Little Debbie chocolate donuts were my jam. It made no sense. I hated breakfast foods to the point of refusing anything pancake, egg, bacon or donut related. Yup, I hated donuts. They were too sweet and too weird. We’d go to church and/or watch the football games. Ryan would down six or seven kolaches, but I’d enjoy my red velvet cake donut which was literally the best thing I’ve ever eaten. Okay, maybe not literally, but top ten for sure. But let’s be honest. You can only eat that stuff for so long before it starts to make a difference. I’d feel so bogged down Sunday and Monday. My workouts were dwindling. Some days I woke up just not feeling it. The site of weights would make me shutter. So I committed myself to skinnifying way more donuts, because believe it or not, I’m not sure I could completely shut them out of my life. Skinny Chocolate Coated Donuts

Ingredients

  • Donut Ingredients:
  • 1/2 teaspoon apple cider vinegar
  • 1/3 cup unsweetened coconut milk (15 calories)
  • 1/2 teaspoon vanilla extract (6 calories)
  • 1 tablespoon I Can't Believe It's Not Butter, "Lite" (40 calories)
  • 1/2 tablespoon Joseph's Maltitol Sweetener, or additional butter (4 calories)
  • 1/2 cup all-purpose flour (200 calories)
  • 3/4 teaspoon baking powder
  • 1 tablespoon xylitol (30 calories)
  • 1 packet Truvia, or 1 1/4 teaspoons
  • 1/2 teaspoon salt
  • Chocolate Sauce Ingredients:
  • 1 tablespoon I Can't Believe It's Not Butter, "Lite" (40 calories)
  • 1 tablespoon Joseph's Maltitol Sweetener, or additional butter (8 calories)
  • 2 packets Truvia, or 2 1/2 teaspoons
  • 1/2 teaspoon vanilla extract (6 calories)
  • 3 tablespoons unsweetened cocoa powder (30 calories)
  • 2 tablespoons water, or more to thin

Instructions

  1. Preheat oven to 350F.
  2. Combine vinegar and coconut milk, and set aside for five minutes.
  3. In a mixing bowl, combing vanilla, butter, maltitol (or additional butter), xylitol, and Truvia. Stir until well mixed. Add coconut milk mixture.
  4. In a separate bowl, combine flour, baking powder, and salt. Slowly add flour mixture to wet mixture, stirring after each addition.
  5. Spoon batter into donut baking tin. Bake 8 - 15 minutes, depending on size of donut tin. Make sure they are baked through by sticking a toothpick in donuts and removing to inspect for wet batter.
  6. While donuts are baking, combine ingredients for chocolate icing, stirring until completely combined. Set aside.
  7. Remove donuts and allow to cool before coating with chocolate icing.
