Skinny Sugar Cookie Bars

Ingredients

  • Cake Bar Ingredients:
  • 1/4 cup I Can't Believe It's Not Butter, "Lite" (160 calories)
  • 1/4 cup Joseph's Maltitol Sweetener (35 calories, or may replace with additional butter)
  • 1/2 cup, or slightly less, granulated xylitol (240 calories)
  • 1/4 cup Truvia Baking Blend (95 calories, or replace with additional 1/2 cup xylitol)
  • 3 tablespoons liquid egg-whites (25 calories)
  • 2 tablespoons fat-free sour cream (20 calories)
  • 1 teaspoon vanilla extract (12 calories)
  • 1/2 teaspoon almond extract
  • 2 1/2 cups all-purpose flour (1,000 calories)
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • Frosting Ingredients:
  • 8 oz. fat-free cream cheese (240 calories)
  • 1/4 cup I Can't Believe It's Not Butter, "Lite" (160 calories)
  • 1 teaspoon vanilla extract (12 calories)
  • 3/4 cup xylitol, blended for about 2 minutes (360 calories)
  • 1/2 cup Truvia Baking blend, blended for about 2 minutes (190 calories, or additional 1 cup xylitol, blended)
  • Optional: food dye, sprinkles

Instructions

  1. Preheat oven to 375F.
  2. Combine I Can't Believe It's Not Butter, maltitol sweetener, xylitol, and Truvia Baking Blend. Using a hand-mixer, stir on medium until fully combined.
  3. Add egg-whites, fat-free sour cream, vanilla extract and almond extract. Mix for additional 15 - 30 seconds, or until combined.
  4. Add flour, baking powder and salt. Mix for an additional 1 - 2 minutes, or until fully combined (Dough will be thick, like cookie dough).
  5. Press batter into a lightly-greased baking dish, about 9 X 13, until even.
  6. Bake 18 - 22 minutes, or until completely cooked through.
  7. Remove from the oven and allow to cool for about 30 - 60 minutes.
  8. Combine all ingredients for frosting and mix (using hand-mixer) until completely combined.
  9. Once bars have cooled, spread with frosting and serve.
