No-Bake Lemon Cream Pie Protein Cheesecake Bars

Total Time: 2 hours, 15 minutes

Ingredients

  • Crust:
  • 6 sheets honey graham crackers (I used Trader Joe's - 390 calories)
  • 1 tablespoon I Can't Believe It's Not Butter, "Lite," softened at room temperature (40 calories)
  • 3 tablespoons unsweetened coconut milk, or more if needed (9 calories)
  • Filling:
  • 2 cups fat-free cream cheese, softened at room temperature (450 calories)
  • 1/2 cup protein powder of choice, such as Ultra Peptide's Lemon Cream Pie (about 370 calories, depending)

Instructions

  1. In a medium-sized mixing bowl, crush graham crackers.
  2. Add butter and coconut milk. Stir until combined. Set aside.
  3. In a separate bowl, combine cream cheese and protein powder. Mix with hand-mixer until combined.
  4. Line a square pan, 8 X 8, with crushed graham cracker crust. Press into pan until firmly packed.
  5. Top with cream cheese filling and spread until smooth.
  6. Cover and refrigerate for two hours before serving.
