They are pretty awful for you. I don’t mean to upset you. On your “cheat day,” you tear through that pretty, purple box like it’s the box set of Grey’s Anatomy – but when it isn’t your cheat day, maybe you should stick to two cookies, because just two Samoas will set you back 140 calories. How much is 140 calories? Well, I’ll put it this way. For 140 calories, you could snack on 3 1/2 CUPS of Smart Balance popcorn, or make Oh-So-Slim Cinnamon Bun Pancakes (including the brown sugar glaze), or eat two full servings of Skinny Cherry Garcia. Ingredients

  • Skinny Samoa Donut Ingredients:
  • 1 1/4 cups white whole wheat flour (500 calories)
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 3 tablespoons Joseph's Maltitol-Sweetened Syrup (26 calories)
  • 2 tablespoons unsweetened applesauce (13 calories)
  • 1 1/2 tablespoon pure vanilla extract (18 calories)
  • 1/2 teaspoon lemon juice
  • 1/4 cup liquid egg-whites (32 calories)
  • Samoa Samoa Frosting Ingredients:
  • 1/4 can full-fat coconut milk, about 1/2 cups (210 calories)
  • 1/4 cup unsweetened coconut milk (11.25 calories)
  • 2 tablespoons Joseph's Maltitol-Sweetened Syrup (17.5 calories)
  • Pinch of sea salt
  • 1 tablespoons I Can't Believe It's Not Butter (40 calories)
  • 1 teaspoon pure vanilla extract (12 calories)
  • 1 tablespoon unsweetened shredded coconut + 1 tablespoon for sprinkling (80 calories)
  • 1/2 teaspoon Truvia (mixed with unsweetened shredded coconut)
  • Chocolate Drizzle:
  • 12 tablespoons Skinny Girl Standard’s Cocoa Butter(240 calories)

Instructions

  1. Preheat oven to 350F.
  2. Mix flour, baking soda and salt in a large bowl.
  3. In a separate bowl, mix together syrup, applesauce, vanilla, lemon juice and eggbeaters.
  4. Add wet ingredients to dry ingredients. Mix until combined, but be sure not to over-mix.
  5. Now, pour your batter into a gallon-sized ziplock bag. You can alternatively spoon your mixture into your donut tin, but they won’t come out as smooth. Snip one corner of your ziplock and churn bag until mixture starts coming through opening. Curl batter inside 6 donut tins.
  6. Pop in the oven for a very short time, only about 6 - 8 minutes, or until donuts are pretty stiff like cake.
  7. Allow donuts to cool while preparing Samoa frosting.
  8. Samoa Frosting Directions:
  9. In a saucepan, bring coconut milk, syrup and salt to a boil over medium high heat, stirring until combined. Your mixture will need to boil and thicken for approximately 25 – 35 minutes.
  10. After your sauce has thickened, stir in your butter and vanilla extract until combined. Cook for another 5 minutes – you’ll notice the color turning a nice golden-brown. If you need to cook your mix longer, allow it to sit on the stove for an additional 5 – 10 minutes. Continue to stir to avoid burning.
  11. Once your mixture is done cooking, allow it to cool in a room-temperature bowl for as long as necessary, usually 5 minutes.
  12. In a small bowl, mix coconut and 1/2 teaspoon of Truvia together to sweeten it up.
  13. If you desire that toasted coconut flavor, heat your oven to 325F and toast your coconut for about five minutes.
  14. Add 1 tablespoon of toasted coconut to the Samoa frosting and savor the remaining coconut for garnishing.
