Ingredients

  • 2 cups all-purpose flour (800 calories)
  • 1/2 teaspoon baking soda (1 calorie)
  • 2 teaspoons baking powder (4 calories)
  • 1 teaspoon cinnamon (6 calories)
  • 4 tablespoons I Can’t Believe It's Not Butter, "Lite" (160 calories)
  • 1/2 cup Truvia Baking Blend (200 calories)
  • 6 tablespoons liquid egg-whites (50 calories)
  • 2/3 cup + 2 tablespoons fat-free sour cream (95 calories - I used Trader Joe's)
  • 1 tablespoon vanilla extract (36 calories)
  • Cream Cheese Filling Ingredients:
  • 8-ounces, or 1/2 cup Fat-free Cream Cheese (120 calories)
  • 6 tablespoons liquid egg-whites (50 calories)
  • 1/4 cup Truvia BB (100 calories)
  • 1/4 cup all-purpose flour (100 calories)
  • Cream Cheese Icing Ingredients:
  • 3/4 cup powdered Serve confectioner's style (42 calories, may replace with powdered sugar)
  • 1/4 cup fat-free half & half (40 calories)
  • 4 ounces, or 1/4 cup cream cheese, at room temperature (60 calories)
  • 2 teaspoons pure vanilla extract (24 calories)

Instructions

  1. Preheat oven to 375 F.
  2. Spray a 9-inch bundt cake pan with non-stick oil, such as Pam.
  3. In a medium bowl, whisk together flour, baking soda, baking powder, and cinnamon. Set aside.
  4. In a separate bowl, beat together butter and sugar until mixed.
  5. Add egg-whites and sour cream, and mix until combined.
  6. Add vanilla and continue to mix until combined.
  7. Add in flour mixture and continue to mix until well incorporated.
  8. Pour half of cake batter into bundt pan and spread evenly.
  9. Prepare filling by combining all ingredients in a mixer's bowl until combined.
  10. Pour the filling over half of batter in bundt pan.
  11. Top filling with the remaining cake batter and spread evenly. Since the batter is thick, it will combine with your filling slightly, but do not worry.
  12. Bake for 40 to 45 minutes, or until baked through.
  13. Allow to cool for 15 minutes before transferring to a serving dish.
  14. Combine the Swerve, half and half, cream cheese, and vanilla extract. Beat until combined.
  15. Pour icing over cake and allow to set.
