So why do we crave Mexican lasagna? Well, think about it. We’re taking two of the best types of food (Italian and Mexican) and joining them in marriage. What’s more beautiful than monogamy and unity and foreverness?

Skinny Enchilada Lasagna

Ingredients

  • 1 lb. shredded or ground chicken breast, cooked (about 640 calories)
  • 1 cup fat-free sour cream (160 calories)
  • 1 1/3 cups salsa of choice (80 calories, depending)
  • 1 tablespoon chopped cilantro
  • 1 1/2 teaspoon chili powder (12 calories)
  • 1/2 teaspoon paprika (3 calories)
  • 1/2 teaspoon ground cumin (4 calories)
  • 1/4 teaspoon onion powder (2 calories)
  • 1/8 teaspoon salt
  • Pepper to taste
  • 8 sheets of ready-to-cook lasagna noodles (rolled flat, such as Barilla – 507 calories)
  • 1 cup yellow corn (124 calories)
  • Black olives, optional
  • 1 cup fat-free cheddar cheese (180 calories)

Instructions

  1. Preheat oven to 350 degrees.
  2. In a mixing bowl, stire fat-free sour cream, salsa and seasonings. Add cooked chicken, shredded or chopped.
  3. Coat a 9 X 9 baking dish with non-stick cooking spray and spread 1/3 of mix across bottom of dish.
  4. Top with 4 sheets lasagna.
  5. Spread 1/2 of remaining mix across lasagna.
  6. Top with 4 sheets lasagna.
  7. Top with remaining mixture and sprinkle on cheddar cheese.
  8. Cover with foil and bake for 35 minutes.
  9. Remove foil and bake for 25 minutes.
  10. Remove and allow to cool for 5 minutes prior to serving.
