I’m eating my Skinny Samoa Brownies and I start thinking . . . why can’t Pretty Little Liars, Scandal, and (rest in peace) Mad Men play year-round? Why do NFL teams take a break in the spring and summer? And why do Girl Scout cookies have a season? One measly, little season. Everyone knows that the world would be a happier place if we could all buy Girl Scout cookies year-round, and if Trader Joe’s had delicious pumpkin yumminess year-round, and if you could wear awesome leggings and boots year-round. Seesh!! Who came up with this seasonal nonsense? Okay, maybe it is the very reason why fall is the best season ever, but still. So I’m breaking our societal rules with this one, but it’s worth it. Man, is it worth it. Skinny Samoa Brownies

Ingredients

  • Brownie Batter Ingredients:
  • 3/4 cup all-purpose flour (300 calories)
  • 1/2 cup unsweetened cocoa powder (80 calories)
  • 1/4 teaspoon salt
  • 1 teaspoon baking powder (2 calories)
  • 1/4 cup I Can’t Believe It's Not Butter, “Lite” (160 calories)
  • 1/2 cup nonfat Greek yogurt (60 calories, depending)
  • 1/3 cup Truvia Baking Blend (130 calories – consider using Truvia BB Brown Sugar Blend, only 10 additional calories, or another stevia/sugar blend)
  • 3 tablespoons liquid eggbeaters (25 calories – may substitute for liquid egg-whites)
  • 4 tablespoons liquid egg-whites (32.5 calories)
  • 1 teaspoon vanilla extract (12 calories)
  • 2 tablespoons unsweetened coconut milk (7 calories)
  • 264 bittersweet mini-chocolate chips divided into two separate piles of 132 chips (140 calories)
  • Additional 1 tablespoon unsweetened coconut milk (15 calories)
  • Samoa Coconut Topping Ingredients:
  • 1/2 cup unsweetened shredded coconut (280 calories)
  • 1 cup dry oats (300 calories)
  • 1 cup full-fat coconut milk (420 calories, comes in a can)
  • 1/8 teaspoon salt
  • 1/4 cup Truvia Baking Blend (100 calories)
  • 2 tablespoons water
  • 1 teaspoon vanilla extract (12 calories)
  • 4 cubes unsweetened chocolate (Baker’s) + 1/3 cup unsweetened coconut milk (195 calories) + 1/2 tablespoon Truvia

Instructions

  1. Preheat oven to 350ºF.
  2. In a bowl, sift together flour, cocoa powder, salt, and baking powder using a stand mixer.
  3. In a separate bowl, cream butter, Greek yogurt and Truvia at medium speed for 2 to 3 minutes, or until combined. Add egg-beaters, egg whites, vanilla, and unsweetened coconut milk. Mix until combined.
  4. Add flour mixture to liquid mixture slowly-but-surely. Mix only until combined. Set aside
  5. In a small microwaveable bowl, combine 132 of mini chocolate chips with 1 tablespoon unsweetened coconut milk. Heat for 30 seconds, or until chocolate has melted. Stir until milky and add to batter.
  6. Mix on low speed using hand-mixer.
  7. Sprinkle in remaining chocolate chips and mix using spatula, only until chocolate chips have spread out.
  8. Coat an 8X8 baking pan with non-stick spray.
  9. Using spatula, add mixture to pan and set aside, covered.
  10. Combine all ingredients for topping in a small pot sprayed lightly with non-stick oil, excluding chocolate and unsweetened coconut milk.
  11. Bring to a boil, then drop heat and simmer for 15 – 20 minutes, or until mixture is thick like oatmeal, stirring often.
  12. Once finished, coat brownie batter with coconut batter in an even sheet.
  13. Bake for 20 to 25 minutes, or until brownies have cooked through.
  14. Once complete, remove from oven and allow to sit on a wire rack for about 15 minutes.
  15. Meanwhile, using same small bowl as earlier, combine 4 blocks of unsweetened chocolate, 1/2 tablespoon Truvia (or 1 tablespoon sugar), and 1/3 cup unsweetened coconut milk. Heat for about 30 seconds – 1 minute, or until chocolate is melted. Stir so no lumps remain.
  16. Once chocolate has thickened, cut a small whole in the corner of a ziplock bag and pipe chocolate through in nice, even lines on top of coconut brownies.
  17. Allow to cool completely before cutting into 16 pieces.
