Skinny Turkey Meatball Sliders

This week, I had the absolute pleasure of trying out Healthy Solutions Spice Blends in my Skinny Turkey Meatball Sliders. I’ve mentioned before that I come from an Italian family, and that my grandmother – whose family originated from a small town outside of Sicily – made the best meatballs on the face of the planet. Literally. So when it comes to big flavor and natural ingredients, I am quite picky. A little bit of a snob, actually.

Having said that, Healthy Solutions is quite the wonder. It’s as if my grandma left breadcrumbs of clues (or should I say “seasoned breadcrumbs” of clues) throughout the states in hopes of igniting some real Italian flavor. And then Healthy Solutions stumbled upon it and the rest was history. Is history. History in the making. And believe me . . . you want a big, ol’ chunk of this history . . . right on your dinner plate.

So, you’re probably wondering . . . Why don’t I just stop talking? Why don’t I just let the pictures talk for themselves? Why don’t I just let you decide? Well, I think you should. Skinified Turkey Meatball Sliders with Olive Oil Biscuits

Ingredients

  • Meatballs Ingredients:
  • 1 & 1/2 pounds lean ground turkey (1,020 calories)
  • 3/4 cup & 3 tablespoons liquid egg-whites (118 calories)
  • 1 & 1/2 cups seasoned breadcrumbs (690 calories)
  • 3/4 cup grated reduced-fat Parmesan (198 calories)
  • 1 package Healthy Solutions Italian Meatballs seasoning, minus 1 teaspoon for biscuits (35 calories)
  • 1 cup fat-free mozzarella cheese (160 calories)
  • Olive Oil Biscuits Ingredients:
  • 2 cups all-purpose flour (800 calories)
  • 1.5 tablespoons baking powder (9 calories)
  • 1/2 teaspoon cream of tartar
  • 1/4 teaspoon salt
  • 1 teaspoon of Healthy Solutions Italian Meatballs seasoning (5 calories)
  • 4 tablespoons olive oil (480 calories)
  • 2/3 cup unsweetened almond milk or unsweetened cashew milk (17 calories)
  • Skinified Mozzarella-Stuffed Meatball Sliders on Olive Oil Biscuits Ingredients:
  • 8 Skinified Mozzarella-Stuffed Meatballs (as prepared above)
  • 8 Olive Oil Biscuits (as prepared above)
  • 1/2 cup Mozzarella cheese, shredded, for topping
  • 1/2 – 3/4 cup tomato sauce of choice for topping

Instructions

  1. Meatball Directions:
  2. Preheat the oven to 350 degrees F.
  3. Combine ground turkey with liquid egg-whites and mix well.
  4. Add breadcrumbs to the meat and egg-white mixture and combine with a stand mixer.
  5. Add Parmesan and the contents of one Healthy Solutions Italian Meatball Seasoning package, and turn stand mixer on medium speed for approximately two minutes.
  6. Round meat into 8 large meatballs, rounding holes in the middle of each.
  7. Stuff each meatball with Mozzarella cheese, approximately 1.25 tablespoons each.
  8. Close meatballs, rounding them together in your hand so that no cheese escapes.
  9. Place, evenly spaced, on a non-stick or well-greased oven-safe tray and cover with foil.
  10. Bake for approximately 35 – 42 minutes.
  11. Biscuit Directions:
  12. Preheat oven to 450F.
  13. In a mixing bowl, combine all-purpose flour, baking powder, ¼ teaspoon cream of tartar, salt and ½ teaspoon Healthy Solutions Italian Meatballs seasoning.
  14. Add 2 tablespoons olive oil and 1/3 cup almond milk or cashew milk and mix only until combined.
  15. Lightly flour a flat surface with about 1 tablespoon of additional flour.
  16. Kneed 3 – 4 times, fold in half and kneed again.
  17. Using a rolling pin, flatten your dough into a circle approximately 12 inches in diameter.
  18. Using a biscuit cutter, cut approximately 8 biscuits.
  19. On a lightly greased tray, bake biscuits for about 10 – 15 minutes.
  20. Remove, dab with butter and serve with warm meatballs.
  21. Skinified Mozzarella-Stuffed Meatball Sliders on Olive Oil Biscuits Directions:
  22. Top half of biscuit with meatball, tomato sauce and Mozzarella cheese, followed by other half of biscuit.
  23. Allow to melt together in an oven preheated to 350F for approximately 3 – 5 minutes.
  24. Serve warm.
