Ah, the Skinny BBQ Flatbread Pizza. Whenever it’s on a menu, wherever I may be, I am in. Skinny BBQ Flatbread Pizza by Skinny Girl StandardWhen I think of BBQ pizzas, I think about high school, because in high school, I had a terrifying obsession with CPK (California Pizza Kitchen). Their BBQ Chicken Pizza was PERFECT. And dipping the crust into a glob of ranch dressing? Oh me, oh my. But I’ve come along way since high school, and I’m no longer a fan of 1,070-calorie meals (that’s the actual calorie count, without ranch). Now, I’m more of a Greek-yogurt “Ranch” and “skinny crust” pizzas kind of girl. More of a Skinny BBQ Flatbread Pizza kind of girl. I still love flavor, people. Favorites? I love my oval cutting board (I don’t have the marble one, but want it). Not only does it look beautiful and totally professional, but it also does the trick. Also a favorite is the cookbook Pizza Night by Williams-Sonoma, my favorite store. Lastly, hello pizza oven, you beautiful invention. I have you and I love you. Marry me.

Skinny BBQ Flatbread Pizza

Yield: 1 Flatbread

Calories per serving: 265

Ingredients

  • - 1/4 cup all-purpose flour (100 calories)
  • Optional: 1/2 tablespoon white cheddar (12 calories - I use Kernel Season's, which is actually popcorn seasoning)
  • - 1 teaspoon baking powder (2 calories)
  • - 1/4 teaspoon Truvia (or substitute with sugar)
  • - A sprinkle of garlic powder or additional Italian seasonings of choice (I used Flavor God's "Garlic Lover's" seasoning)
  • - 2 tablespoons egg whites (17 calories)
  • - 1 tablespoons eggbeaters (8 calories - May substitute with an additional tablespoon of egg whites or substitute "all" with 1 egg)
  • - 1/4 cup low-fat cottage cheese (45 calories)
  • Topping Ingredients:
  • - 1/4 cup part-skim mozzarella (70 calories)
  • - 2 tablespoons BBQ sauce of choice (about 35 calories, depending)
  • - Additional seasonings, such as Flavor God's "Garlic Lover's" seasoning, Italian seasoning, Basil, Oregano, etc.

Instructions

  1. Preheat your oven to 425F.
  2. In a medium-sized bowl, mix together all of your ingredients for your dough (at this point, you will be omitting all toppings).
  3. Add in wet ingredients, one-by-one, but do not mix until all wet ingredients have been added (continue to omit toppings).
  4. After your ingredients have been well mixed, flatten your dough [probably will be a bit gooey, which you can fix by adding an additional tablespoon of flour (worth 25 calories) or you can ignore (just like me)] and spoon it into a flat circle on a sheet of parchment or non-stick foil.
  5. Place your parchment paper or foil (with dough on top) in the oven and bake for approximately 5 - 7 minutes, or until the top of your dough is no longer sticky.
  6. Remove. Spread with BBQ sauce, mozzarella and seasonings and pop back in the oven for an addition 7 minutes (approximately) or until the cheese has melted. I leave mine in slightly longer, because I like my cheese a bit burnt.
  7. Remove once complete and enjoy!
