Soft or crunchy depending on how long you bake it. And it tastes like the real thing. Like the real, in the mall, fresh-baked cookie stand you always walk by and you think to yourself, “If only there wasn’t such a thing as calories. If only butter was equivalent to butternut squash. If only, if only, the woodpecker sighs . . .” Oh, sorry. I’m quoting Holes again. Make it stop.

Skinny Single-Serve Sugar Cookie!

Calories per serving: 110

Ingredients

  • 3 tablespoons pastry flour (62 calories - if using whole wheat pastry flour, you may want to increase almond milk by 1 tablespoon)
  • 1/4 teaspoon baking powder
  • 1/8 teaspoon baking soda
  • 1/8 teaspoon salt
  • 2 tablespoons Truvia
  • 1 tablespoon unsweetened applesauce (7 calories)
  • 2 tablespoons unsweetened almond milk (4 calories)
  • 1/4 teaspoon pure vanilla extract (3 calories)
  • 1 teaspoon sprinkles (20 calories)
  • 1 teaspoon I Can't Believe It's Not Butter, "Lite" (13 calories)

Instructions

  1. Preheat oven to 350F.
  2. Mix all of your dry ingredients together and follow up with wet ingredients.
  3. Stir until all of your ingredients are well combined.
  4. Pour into an individual cookie pan or create your own with non-stick foil or parchment and regular foil - which I've done before.
  5. Bake for about 10 - 15 minutes, or until the middle of your cookie is no longer gooey (and crispy, if desired).
