It is so simple to achieve the perfect Skinny Cream Cheese Frosting and it only requires a few ingredients. But the best part? It goes with all of your favorite desserts. Some of my favorites, anyway, are my Skinny Carrot Cake, Skinny Vanilla Bean Cupcakes, and Skinny Red Velvet Pancakes to name just a few. Notice the word “cake” is in all of those recipes? What does that say about me? Anyway, you may not trust how simple this recipe is, nor how few ingredients it requires. It’s like someone asking if you want a million dollars and then handing it to you in a suitcase, and you’re like, “Wait . . . is this a trick? Who are you anyway? And why do you look like Morgan Freeman?” Sorry, I just picture him that way. Why do I love Skinny Cream Cheese Frosting so much? You mean, beyond what I’ve already mentioned? Okay, I’ll play this game. Firstly, it is delicious. I can’t tell you how much it tastes like the real deal. Just the other day, for curiosity, I was in the baking section at Tom Thumb and picked up a can of pre-packaged cream cheese frosting. Like always, I went straight to the nutrition and you know what I found? Two tablespoons was like, 120 calories. And I could eat an entire cup of that stuff, no problem. By my math, one cup would be 960 calories. Two to three meals worth, people. Secondly, I love the versatility. You can use it on pancakes, cupcakes. Inside homemade Twinkies (I must try this sometime). It goes perfectly with red velvet, lemon poppyseed, carrot cake, even chocolate. - 1 tablespoon powdered Swerve or powdered Truvia Baking Blend (0 - 23 calories)
- 1 tablespoon fat-free cream cheese (15 calories)
- 1/4 teaspoon vanilla bean paste or vanilla extract (3 - 5 calories)
- Mix ingredients together.
- Allow to chill in fridge for at least 15 minutes.
- Top on a vanilla bean cupcake, carrot cake pancakes, or anything your heart desires!
