Skinny Miniature Cinnamon Rolls

Yes, I made Skinny Miniature Cinnamon Rolls, and I ate the whole batch. Sweets for breakfast is like a touch of Christmas morning. One bite of a warm cinnamon roll and you’re thrown back into December 1995, plummeting down the stairs in your PJ bottoms and trying not to trip over your sister’s slept-in braid that thrashes angrily between her shoulder blades. It’s like a pendulum warning you that she was born first, therefore she should see her presents before you see yours. Maybe this was just how it was for me. Morgan’s hair was really long and mine was short, tangly, sad – maybe that’s why I have nightmares of taking a tumble down the stairs after her braid wraps around my ankle like Devil’s Snare and drags me into a pit to hang with Fluffy (Hollllla, fellow Harry Potter freaks!).

Skinny Miniature Cinnamon Rolls

Yield: 5 Mini Cinnamon Rolls

Serving Size: 1 Mini Cinnamon Roll

Calories per serving: 110 - 120

Ingredients

  • 1 cup + 1 tablespoon (for dusting) white whole wheat flour (425 calories)
  • 1 1/4 teaspoons baking powder (2.25 calories)
  • 1/4 teaspoon salt
  • 2 1/2 tablespoons unsweetened applesauce (18 calories)
  • 3/8 cup unsweetened almond milk (11 calories)
  • 1/2 teaspoon distilled white vinegar
  • 3 tablespoons Truvia, divided
  • 1/2 teaspoon Earth Balance (8 calories)
  • 1 teaspoon ground cinnamon (6 calories)
  • Glaze Ingredients:
  • 2 tablespoons powdered Swerve or organic powdered sugar (0 - 60 calories)
  • 1/2 teaspoon Earth Balance (8 calories)
  • 1/2 tablespoon unsweetened almond milk (1 calorie)
  • Optional:
  • 1 tablespoon sprinkles (60 calories)

Instructions

  1. Preheat oven to 400F.
  2. In a large bowl, mix together 1 cup of flour, baking powder, and salt. Add 2.5 tablespoons applesauce, stirring as well as you can. The applesauce will be lumpy in the mix, but don't worry. Refrigerate for 10 minutes.
  3. While mix is still in fridge, combine 1.5 tablespoons of Truvia/Stevia/sugar and cinnamon in a small bowl.
  4. Once ten minutes have passed, take dry ingredients out of fridge and add in your almond milk, distilled white vinegar, and remaining Truvia/Stevia/sugar. Don't over-mix.
  5. Add your extra tablespoon of flour onto a clean counter and roll out dough with a rolling pin, knead and roll again. Repeat three times. For a final time, roll out dough until about 1/4 of an inch thick.
  6. Drizzle dough with melted butter, brush over entire slab and sprinkle with cinnamon/sugar mix. Now, grab the long side of your slab and slowly, carefully roll it up, about three - four rolls. When it is finished, it should resemble a roll cake. Take out a knife and cut into five even pieces. Place five rolls on a non-stick circular pan on parchment paper.
  7. Pop in the oven for about 10 minutes, or until lightly golden and perfectly cooked through.
  8. While baking, combine mixture for glaze, stirring out clumps of powered sugar.
  9. Take out cinnamon rolls when timer has sounded.
  10. Drizzle with glaze and serve immediately!
