I’m not trying to accomplish the world’s tastiest oxymoron when I say Skinny Giant Chocolate Chip Cookie. It’s skinny when it comes to you, and it’s giant when it comes to the cookie. Does that clear a few things up? Anyway, somehow, someway I did it. I have been dying to create a 100 calorie cookie that actually tastes like a delicious cookie, that’s soft and moist, that has choco-chips . . . more than three. Skinny Giant Chocolate Chip Cookie

Calories per serving: 95

Ingredients

  • 3 tablespoons pastry flour (60 calories - if using whole wheat pastry flour, you may need to increase milk by one tablespoon)
  • 1/4 teaspoon baking powder
  • 1/8 teaspoon baking soda
  • 1/8 teaspoon salt
  • 1 - 2 tablespoons Truvia
  • 1 tablespoon unsweetened applesauce (7 calories)
  • 2 tablespoons unsweetened vanilla almond milk (4 calories)
  • 1/4 teaspoon pure vanilla extract (3 calories)
  • 10 semisweet chocolate chips (20 calories)

Instructions

  1. Heat oven to 350F.
  2. Mix all dry ingredients together, followed by wet ingredients.
  3. Stir until all of ingredients are well combined.
  4. Pour into an individual cookie pan, or - if you are a little unprepared like I was - make your own. Grab a mason jar or coffee mug out of your cabinet and wrap parchment paper around the base, followed by non-stick foil (as seen below). Remove jar/mug and use foil as a baking "pan."
  5. Pour ingredients inside baking dish and pop in the oven for about 10 - 15 minutes, or until baked to your liking. The top of your cookie will start to brown and you'll know to take it out.

    This is more like a muffin. I don’t think it’s possible to approach the texture of a cookie when butter is completely excluded. It was worth a try, though.
