I am so excited to write about my new creation that I haven’t even finished my plated yet, and the reason I’m so excited has to do with the name of my fav, Skinny Cinnamon Bun Pancakes. Sticky keyboards = success. I was inspired by Buzzfeed’s article, 27 Pancakes Worth Waking Up For. 24 on the list goes to No. 2 Pencil’s Sour Cream Cinnamon Roll Pancakes which look so good, you could die of salivation. I stumbled into the kitchen and searched my pantry, hoping to whip together the perfect batch of cinnamon bun pancakes that wouldn’t leave me at the gym until 2:00 AM. Favorites? Who doesn’t want a pancake batter dispenser to make amazing designs with? Also, if I can’t have those copper mixing bowls, I don’t even want pancakes. Psych! But seriously, I love them. And lastly, count me in for that nonstick griddle. It. IS. Awesome.

Requires a lot of equipment, but so. oh. worth it. The stickier the food, the better.

Skinny Cinnamon Bun Pancakes

Calories per serving: 160 - 215

Ingredients

  • Pancake Ingredients:
  • 1/4 cup pastry flour (82 calories - if using whole wheat pastry flour, increase milk by one tablespoon)
  • 1/4 teaspoon baking powder
  • 2 packets Truvia (or 1 tablespoon)
  • 1/8 teaspoon salt
  • 1 tablespoon unsweetened applesauce (7 calories)
  • 1 teaspoon pure vanilla extract (12 calories)
  • 3 tablespoon unsweetened vanilla almond milk (6 calories)
  • Cinnamon Brown Sugar Glaze:
  • 1 tablespoon pecan apple butter (30 calories)
  • 1 teaspoon Truvia Baking Blend Brown Sugar (10 calories)
  • 1 tablespoon unsweetened almond milk (2 calories)
  • 1/4 teaspoon ground cinnamon (1.5 calories)
  • Sticky Sugar Glaze:
  • 2 tablespoons powdered Swerve or organic powdered sugar (6 - 60 calories)
  • 1 tablespoon unsweetened almond milk (2 calories)

Instructions

  1. In small bowl, mix all pancake ingredients - dry ingredients first, wet ingredients to follow.
  2. In a separate bowl, mix all "cinnamon brown sugar glaze" ingredients, making sure to get rid of any brown sugar/cinnamon clumps.
  3. Using a third bowl, mix well all "sticky sugar glaze" ingredients.
  4. Take pancake batter and drop 1/3 of the mix onto a pan, slightly heated. Keep your flame on medium heat. Allow batter to bake for about 15 seconds and then drip 1/3 of "cinnamon brown sugar glaze" across pancake. Some of the glaze will drip over the sides of the pancake, which is actually desired. This will just barely burn the cinnamon brown sugar and give it a nice flavor.
  5. Flip pancake when ready and heat other side for an additional 45 seconds - one minute. Once baked through, move pancake around pan to pick up any drippings from "cinnamon brown sugar glaze."
  6. Allow pancake to cool on a plate. Drip 1/3 of "sticky sugar glaze" on top of pancake.
  7. Repeat twice.

    OMG!!! This is my new favourite recipe on your site. So unbelievable good. I was going to make the giant cinnamon roll but since I’ve made that twice now I thought I should try something new. This is so good, too good to share lol. I had a major binge on sweets yesterday, coincidently it was the first day since finding your site that I did not make one of your recipes. I think I have to include your recipes daily into my diet, which is fine by me because they are all so good.

I am SO happy you liked these pancakes, because they really are quite the treat 🙂 I don’t know about you, but I have an insane love for cinnamon buns, and I feel like the pancakes really hit the spot.
