Pumpkin is one of my favorite ingredients to work with because it is so low in calories, which is why I was originally dying over the idea of skinny pumpkin muffin bites. Oh, the creations one can create with pumpkin . . . I remember, because I immediately turned to my sister (who I was living with at the time), and said, “Hey, is it legal to make pumpkin stuff in the spring time?” And she was like, “Um, yeah, this is the United States of the Americas after all.” Just kidding, she did not say “of the Americas,” but it would’ve been the perfect irony had she – you know, playing on my extreme exaggeration. Skinny Pumpkin Muffin Bites with Sugar Cookie Glaze

Ingredients

  • Muffin Ingredients:
  • 2 cups white whole-wheat flour or all-purpose flour (800 calories)
  • 1 1/2 cups white pastry flour (495 calories - if using whole wheat pastry flour, increase milk by two tablespoons)
  • 2 teaspoons baking soda (4 calories)
  • 1 teaspoon baking powder (2 calories)
  • 1 teaspoon cinnamon (6 calories)
  • 1 teaspoon nutmeg (11 calories)
  • 1/2 teaspoon salt
  • 1/4 cup + 2 tablespoons Truvia Baking Blend (150 calories)
  • 2 packets natural stevia (optional for a little sweeter outcome)
  • 2 cups pumpkin puree (160 calories)
  • 1/2 cup + 2 tablespoons applesauce, unsweetened (63 calories)
  • 1 tablespoon Joseph's Sugar-Free Maple Syrup (all natural), or another maple syrup brand (8.75 calories - 52 calories)
  • 1 tablespoon Trader Joe’s Cookie Butter or I Can't Believe It's Not Butter, "Lite" (40 – 90 calories)
  • 3 tablespoons unsweetened vanilla almond milk (7 calories)
  • 9 tablespoons liquid egg whites (75 calories)
  • Sugar Cookie Glaze Ingredients:
  • 1 tablespoon I Can't Believe It's Not Butter, "Lite" (40 calories)
  • 1 tablespoon Trader Joe’s Cookie Butter (90 calories - or additional tablespoon of butter or maple syrup)
  • 1 1/4 cups powdered sugar, or replace with Swerve confectioner's style for far less calories (62.5 - 585 calories; may use half sugar, half Swerve)
  • 1 teaspoon vanilla bean paste (20 calories)
  • 1-2 tablespoons water

Instructions

  1. Heat oven to 350 F. Mix all dry ingredients together in one bowl, and all wet ingredients together in another.
  2. Combine the wet and dry ingredients in one large mixing bowl and mix until all of the lumps are out. Fill your muffin tins, I used two round tablespoons for each muffin.
  3. Pop those bad boys in the oven and bake for about 15 – 17 minutes.
  4. While baking, make your sugar cookie glaze. If you don’t have Trader Joe’s Cookie Butter, you need to A.) order it immediately, and B.) substitute it for regular butter or maple syrup.
  5. Take out your muffins and immediately drizzle with glaze.
  6. Allow to cool before serving.
